MONDAY MEANDERINGS

Good Monday Mornin' Yall,

Burrrr!!!! It is cold out here this morning. It is 31 degrees with a windchill of 24 degrees. Yesterday it got up to 68 degrees here and we had some rain. "THANK GOD" there were no Severe Thunderstorms as was predicted earlier in the week. I had turned my air-conditioner back on a while Saturday evening and had it on and off yesterday as well. I had to turn the heat back on again last night before I went to bed. Sure wish it would make up it's mind if it is going to be cold or warm.LOL. While I had the air-conditioner on, hubby and girls were freezing. When you are up doing things, or at least for me, I get all hot and sweaty. Oh well, it passed. I did turn it completely off Saturday night. But, the heat is back on again this morning and running.

I want to "THANK" each and everyone that said prayers for my hubby. He is feeling some better. I found some medicines in the cabinet from when I was sick and started him on those Friday night. Those headcolds sure do like to hang around for a while. They seem to wear their "WELCOME OUT" as people would say. LOL. I am feeling some better as well.

Saturday morning I wasn't able to go to my oldest daughter's Basketball games. I was hurting and had to take some pills and go back to bed. Their first game was here in town that morning and they played Wilson, AR. They lost 34 to 21. This is the team they played first in the season to and lost to. The second games was out of town at Lake City, AR, that afternoon. The won 29 to 18. GO REBELS!!!! I'm sure they were both good games. Hubby took her to her games on Saturday. Even tho he wasn't feeling up to par, he told me to stay here and lay around. I thought that was so sweet of him. I know the reason he does it is because , well one reason is because he Loves his girls, and the other is because he is gone alot and isn't able to see all their activities. So, Saturday was a Father/Daughter day. They left home at 10:15a.m. Saturday morning and didn't get back home until 5:00p.m. They had a whole day of togetherness.

Friday night I had put a Beef Roast in my slow cooker by itself. Well, Saturday afternoon after I had woke up from sleeping(my pills make me a little sleepy), I cut up some potatoes and some baby carrots and a 1/4 head of cabbage and put it in a pot on the stove to boil. I also made a pan of homemade buttermilk cornbread to go with it. I had supper ready for them when they came home Saturday evening. It was all so yummy. Most of the time when I cook a roast I put the potatoes and carrots in with the roast. I wanted to try something different this time. I'm glad I did because hubby really loved it. We had plenty left so we had leftovers for our supper Sunday night. I had fixed Brunch on Sunday. I fried some sausage and opened up a couple of cans of those Jumbo Biscuits. I also fried some eggs for hubby and youngest daughter. My oldest daughter wanted scrambled eggs, so I scrambled her some. I had already had a bowl of plain cornflakes so I wasn't hungry. I did eat a couple of sausage and biscuits later on. Needless to say, we will be having leftovers again tonight. I think we will finish it off tonight. I love to cook this way where it will last a few days. That way all I have to do is just heat it up. LOL. Hey, there is nothing wrong with leftovers here in our house. Sometimes them leftovers taste better the second and third time around. I will make another pan of cornbread for tonight. We ate all the cornbread last night.

Well, my daughter doesn't have a game tonight after all. It was on the schedule but there were some question marks beside it. We were scheduled to play Luxora, AR here. You may remember me telling about that game last week when we played them at Luxora, AR. She will just have her regular basketball practice tonight. I'm glad we have a slow week. I think her next game is on the 15th of this month. I do know there are a couple of games that wasn't on the schedule, but I'm not sure when they will be playing those games. So, that means my youngest daughter won't be Cheering tonight.

I was laying in bed Friday night watching Food Network. Yes, I'm a big Food Network fan here. I was watching the All Star Holiday Show and Paula Deen was on there with Robert Irvine at her home in Georgia. She made some Black-Eye Pea Fritters with some Cranberry Sauce dip. Oh my goodness, it looked so yummy. I think I am going to try and make them for here on Christmas Eve. They looked really easy to make as well as the dip. I may even make some for New Year's Eve as well. Me and hubby don't go out and party. The last few years we have been having a celebration at our house with the girls. I usually get some finger foods and we have that to snack on. I usually buy the girls some Non-Alcoholic beverage to drink and then me and hubby has our Champagne. That is how we bring our New Year in. How do you celebrate New Year's Eve? Please feel free to let me know in your comments if you want to. Then, on New Year's Day, I always cook a pot of Black-Eye Peas for "GOOD LUCK". And it wouldn't be good without my homemade buttermilk cornbread. Have I made you hungry yet? LOL. I was out visiting yesterday in blogland and people were talking about different kinds of food and had my mouth watering. LOL. So now, it is my time to make your mouths water. LOL. No, I'm just kidding with you. I had to add a little humor this morning.

Hi Karen,

Brrr morning here as well! My son is still here from the weekend, so we have been busy. Today, he is taking me shopping. I just have to finish my Christmas shopping, because several of the gifts have to be mailed.

I hope your husband feels much better. Those head colds are the pits, for sure. And I hope you feel better as well. Your dinner of Beef pot roast sounds delicious. Have to try that soon.

Good morning Karen, I pray this will find you and your husband feeling much better! I guess it's just that time of the year for colds and flu and such. My youngest daughter, Kathy, is down with flu . My husband and I went over yesterday to check on her and went and picked up some meds and soup,crackers, etc. for her .

I will call her in a while and see if she is feeling better. Knowing her , she may be up and gone to work ! She pushes herself.

It is cold here as well, this morning, but not as chilly as it is there. I have the old Dearborn lit and its putting off some cozy warmth !

Shivering here in Wisconsin. After the winterstorm, we have ice all over. Brrr. So thankful our house buffered us from the cold and wintery conditions.

Aww, that's sweet of your Hubby to let you stay home while he can spend extra time with the girls. I do some extra special cooking when my Hubby does that. Last night we had pork roast with potatoes and broccoli. And "mosh"-that's what Jennee calls meat juice poured over bread.

Stay warm or cool (if you need the air conditioner on). :)

It isn't terribly cold here on the plains of Texas..44 and rising.
I am looking forward to seeing some of your decorations..especially your little village. I don't have one but think I might start one this year.

Hi Karen,
It is windy here and beginning to cool down. It is predicted to drop 20 degrees from noon to 7:00pm. At 5:30 am it was 56 degress here. We only received a small amount of rain last night...just enough to wet the ground and for the streets to be a little wet this morning for the workers commute.

New Year's Day I cook black-eyed peas, collard greens, ham,(sometimes- fried sliced hog jowls) crackling cornbread and a carrot cake. We tell the kids that they need to eat plenty of greens so that they will have lots of dollars (greenback's as my grandmother called them) during the next year. LOL.

We have blackeyed peas on new yrs. too. We use to go to a watch service at church, now we don't drive after dark (the old age thingLol)

Hi Karen, hope you and hubby are feeling better with each passing day. We are very cold here in Indiana today also. We had an icestorm on Saturday and then thunderstorms yesterday in the early afternoon. The rest of the week is going to be cold with snow for tomorrow through Wed not sure how much.

Stay warm and hope you get to feeling much better. Have some hot tea with honey that might help ya a bit.

All of that food sounds wonderful and I would be hungry but I just had lunch, so am full-up. It does sound good though. I love nothing better than eating southern food. It's all comfort food and when we vacation in the US, I get my fill.

I am keeping you and your family in my prayers. Remember, nothing is impossible with God.

I do the black eyed peas for New Years and ham...pork instead of chicken because pork roots forward into the new year and chickens scratch backwards....lol!

Hi Karen, I hope this finds you and your husband feeling better. We have girls to and my husband really liked when He could have them to himself. They are adults now and He talks to them 2 to 3 times a week on the cell phone. Thank you for stoppong by. We have wind and tempture at 31.

Our temperatures have been staying the same...FRIGID! lol I can't believe how yours is yo-yoing all over the place. The wind was wicked here today and really blowing the snow around. I hope it's nice out tomorrow because I'm really starting to have cabin fever, not having gone out in over 3 days! lol

I think it does your hubby good to have time like that with his girls and I've no doubt the girls love having their daddy around:-) I'm sorry you didn't feel up to going to the games but it was better you stayed home and took care of yourself.

I agree with you, leftovers are GREAT...anytime I can just reheat something up instead of having to cook it is great! lol Especially something like a stew....I find it so much better the next day. Whenever I cook a roast or chicken, the next night I make Hot Sandwiches with the leftover meat, smothered in gravy and also make homemade fries. Yum yum!

Black Eye Peas are not something anyone cooks around here...in fact, I've never even seen what they look like, let alone tasted any! lol Years ago we use to go dancing on New Years Eve but the last 10 years or so, we just stay home and watch tv...I usually prepare finger foods and sometimes have a couple of neighbours over.

Hi Karen,
I hope you are feeling better. I'm sniffly tonight but otherwise doing o.k. It is very cold here in my neck of the woods. It started out in the 40's this morning and that was the high for today! I love it, though, I have to say.
I like to fix ham, black-eyed peas, cabbage, and cornbread for New Year's dinner. I miss getting fresh black-eyed peas here where we live because there was an abundance of them in Texas. We just make do with dried, canned, or frozen and after I "doctor" them up with bacon drippings and onions, they aren't too bad!

Hi Karen....I hope you are feeling better. Our snow has all melted and theres a lot of rain. As far as New Years Plans we stay home with 2 bottles of Dom Perignon (our favorite) and I make finger foods...nothing major....I'd rather be with my Hubby and kids than with anyone else on New Years!
